Gas Mark is a temperature scale used on gas ovens, primarily in the UK, Ireland, and some Commonwealth countries. It ranges from ¼ (very low) to 10 (very high). Gas Mark 4 (180°C/350°F) is a common moderate baking temperature.

Fan (convection) ovens circulate hot air, cooking food faster and more evenly. They run about 20°C (25°F) hotter than conventional ovens. When using a fan oven, reduce the temperature by 20°C from what the recipe states.
Most cakes bake at 180°C (350°F/Gas Mark 4). For fan ovens, use 160°C. Delicate sponges may need 170°C, while dense fruit cakes work better at 150°C. Always check your specific recipe.
